On my recent trip to Brisbane, I didn’t have much spare time, so I looked for the closest doughnut store to where I was staying. It turned out to be a place called Happy Dough.
It wasn’t easy to find using Google Maps, but I eventually discovered it downstairs in a food court.

I didn’t realise they only did gluten-free doughnuts.
I got a couple of doughnuts, including a Cinnamon Doughnut, and they gave me a bonus Cinnamon Doughnut. 2 for the price of 1 – I’m already a winner.
I had to wait while they cooked them. I’m not complaining – I like freshly cooked doughnuts.

My Cinnamon Doughnuts were hot – very hot. I could barely touch them. Again, I’m not complaining. I like my hot food burn-the-tongue hot!
They had a very good flavour and weren’t overly oily. They were coated in plenty of cinnamon sugar.

Typically with gluten-free doughnuts, they fell apart easily. Again, not complaining, as long as the flavour is good. And it was.
They had a very good consistency and thickness, and were a good overall size.
Currently, Happy Dough only has stores in Queensland and Victoria. I wonder if they have plans to expand.
