Tucked away in what almost seems like a secret location is AP Bakery in Sydney’s Surry Hills. To me, it seems like a secret location but to the many people who were there, it’s obviously not a secret. The place was buzzing and they had loads of pastries for sale.

It’s on an upper floor of a building in Surry Hills. I’m sure most of the patrons were people who work or study nearby.

The AP apparently stands for All Purpose, but the name of the building is AP House. So I don’t know what the truth is.

I love uncovering bakeries, and this one was like a real discovery because it’s not well signed-posted from outside.

I like that they offer unusual flavours. One choice they had was a Three Milks Bombolini. However I got the other flavour – a Fig Leaf Crème Brûlée Bombolini.

The top of the bombolini seemed to have a double layer with the outer layer hard and the lower layer soft. It was nicely sweet.

The dough was soft, airy and very fresh as it should be.

The custard was not too sweet and just a tad runny.

Overall, a very nice doughnut – that is, bombolini.

If you go there, watch for the signs to the bakery. You need to go up the elevator to get there. It’s well worth the trip.
