Just when you think you’ve tried the best of Berliner Bakery’s doughnuts, they pull this number out of their bag of tricks.

The Creme Brûlée Doughnut was a special edition doughnut only available (at the time) at the Good Food & Wine Show in Sydney. I’m sure it will make another appearance down the track.

It was sensational.

Berliner Bakery doughnuts are always exceptional. But this one took it to another level.

It had a rich toffee topping, sweet, just a little burnt and nicely crunchy.

The dough was the usual delicious dough that Berliner do. It’s soft and chewy with just the right flavour to host the fillings and toppings.

The custard was the usual custard that Berliner do. It’s not too sweet and is the perfect consistency for a doughnut – it doesn’t run between your fingers, but sits obediently in the dough while you munch.

One of the difficulties of offering the Creme Brûlée Doughnut at other outposts will be getting the topping right. That’s because the sugar topping is burned onsite not long before you buy it. So it needs someone who can do it just right. The one I got was done by Berliner’s creator, Rachael.

If you see this doughnut at one of Berliner’s stands, be sure to give it a go. As I said – sensational.
